Chef de Partie (Kitchen/ Pastry) for Brunetti Singapore

As a Chef de Partie (CDP) you are responsible for supporting the Sous Chef in a busy kitchen delivering consistently high-quality food, handle purchase orders and ensure that items arriving without authorisation are not received. You ensure the highest standards and consistent quality in the daily preparation and keeps up to date with the new products, recipes and preparation techniques.

Duties and Responsibilities

  1. Takes care of daily food preparation and duties assigned by the superiors to meet the standard and they quality set by the Restaurant.

  2. Follows the instructions and recommendations from the immediate superiors to complete the daily tasks.

  3. Coordinates daily tasks with the Sous Chef.

  4. Responsible to supervise juniors chefs or commis.

  5. Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.

  6. Ensure that the production, preparation and presentation of food are of the highest quality in all times.

  7. Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.

  8. Full awareness of all menu items, their recipes, methods of production and presentation standards.

  9. Operate and maintain all department equipment and reporting of malfunctioning.

  10. Ensure effective communication between staff by maintaining a secure and friendly working environment.

  11. Guides and trains the subordinates on a daily basis to ensure high motivation and economical working environment.

  12. Should be able to set an example to others for personal hygiene and cleanliness on and off duty.

  13. Daily feedback collection and reporting of issues as they arise.

  14. Assess quality control and adhere to service standards.

Prerequisites

  1. A high standard of spoken and written English.

  2. Flexible working hours subject to the demands of the business.

  3. Able to work in a fast paced environment.

  4. Excellent culinary catering talent.

Experience

At least 3 years cooking experience in a well-established restaurant or full-service hotel and/or minimum 1 year in a supervisory role.

Restaurant Supervisor for Brunetti Singapore

Duties and Responsibilities

  1. To perform opening and closing duties.

  2. Interact with customers; take orders for food, drinks and snacks.

  3. Provide excellent customer service at all times and to handle customers’ feedbacks.

  4. Assess customers’ needs and preference and make recommendations.

  5. Ability to sell or influence others for up selling and suggestive selling.

  6. Server customers in a friendly and helpful manner.

  7. Clean up after customers and keep work area clean.

  8. Maintain a clean working area by sweeping, vacuuming, dusting, cleaning of glass doors and windows etc if required.

  9. Prepare inventory or purchase requisitions as needed to replenish supplies.

  10. Comply with all food and beverage regulations.

  11. Guides and trains the subordinates on a daily basis to ensure high motivation and economical working environment.

  12. Should be able to set an example to others for personal hygiene and cleanliness on and off duty.

  13. Daily feedback collection and reporting of issues as they arise.

  14. Assess quality control and adhere to service standards.

Prerequisites

  1. Must be able to communicate in English, both writing and speaking. Ability to speak other languages will be an advantage.

  2. Good personality and positive interpersonal skills required.

  3. Excellent service attitude and work with passion, energy and professionalism.
